Serves: 4-6 / Cooking time: 30 min


3 table spoons oil

1/2 tbsp curry powder

1/2tbsp salt

1tbsp garlic paste

1 courgette

1/2 broccoli

1/3 cauliflower

2 potatoes

2 tomatoes

250g string beans

1 large onion

1or 2 green chillies

a handful of chopped coriander

How to cook:

Heat the oil in a large, heavy-based saucepan clay pot can be used if available. Add onion and cook for 3 minutes until golden,then stir in the crushed garlic, curry powder and chopped tomatoes. When the tomatoes at cooked add rest of the vegetables. All those tomatoes will make a nice thick sauce which makes this Curry very tasty. Cook for 5 minutes and then stir and cook again in a slow heat for another 10 minutes. After 10 minutes #vegetablecurry will be ready to serve. We added some chopped coriander and toasted cumin which makes the dish even more mouthwatering. This is one easy recipe which Vegan or vegetarian anyone with love it.
