ONE OF THE EASIEST RISOTTO RECIPES ANYONE CAN MAKE

This risotto recipe is so easy to make I do it all the time, but using different vegetables. I love asparagus and I can eat it with anything but I would recommend you to make this recipe with the vegetables you really like.

PEA AND ASPARAGUS RISOTTO

Servings: 2

Ingredients

  • 1 tbs olive oil
  • 1/2 onion finely chopped
  • 1 garlic clove
  • 180 g risotto rice
  • 500 ml vegetable stock
  • 125 g asparagus
  • 50 g frozen peas
  • 25 g butter
  • 20 g rocket
  • 20 g parmesan cheese
  • 10 g salt and pepper

Instructions

  • Heat the oil in a large pan. Add the onion and cook for 5 minutes until softened. Add the garlic and rice and cook for 30 seconds until coated in the oil.
  • Gradually add the stock, a ladleful at a time, stirring continuously and allowing each ladleful to be absorbed before adding the next after 10 minutes add the asparagus then cook further 5 minutes until the rice is tender. 
  • Stir in the peas and butter, cover and leave to stand for 1-2 minutes. season the risotto to taste, then spoon into a warmed bowl and decorate with some rocket leaf and shaved parmesan
