2 medium size onion
2 tablespoon salt to cure
1 teasoon salt in the recipe
1 teaspoon paprika powder
1 teaspoon turmeric
2 tablespoon oil
1. First cut all the karela or bitter gourd into small cubes and cure with plenty of salt for 2 to 3 hours then rinse all the salt away and sauté .This will get ride of extra bitterness.
2. Next simply Fry some onion and add chopped fresh tomatoes, add the seeds from bitter gourd if you want if not just avoid.
3. Once they are soft add paprika powder, some turmeric and lemon. Cook them for a minute and add Karela.
4. Cook for two minutes and stir it with the spices then cook for another 5-7 minutes with the lid on. It should be ready, now serve with hot rice, bread or any thing you prefer.
