Pesto makes absolutely anything better. From pasta to a sandwich, it can turn something from bland to savory and delicious! I used to get pesto on all of my sandwiches from Panera Bread, and since getting a sandwich from Panera was a frequent occurrence, I was so used to its flavor. However, it isn’t vegan – so at the start of my veganism, I really missed it. Now, I’ve made my own pesto, and it’s healthier and creamier!

Kale Avocado Pesto

Ingredients:

  • 1.5 cups packed basil leaves, large stems removed
  • 1/2 cup packed kale, large stems removed
  • 1 small avocado
  • 2 tbsp almond slices or walnuts
  • 3 cloves garlic
  • 4 tbsp nutritional yeast
  • 1 tbsp vegan butter (optional)
  • 2 tbsp lemon juice
  • Dash salt to taste
  • 3 tbsp olive oil
  • 4-6 tbsp water (or more depending on desired consistency)
